5 Ingredient Mexican Casserole
It’s hard to come up with meals that my toddler, my vegetarian self, and my meat-eating husband will all enjoy. Any mother (or kind of lazy person like myself) wants quick and easy meals. This is one my whole family enjoys and it’s super quick. It’s only 5 ingredients, plus 1 add-on once it’s completed which is optional.
You will need:
– Chili Cheese Fritos crushed up (3/4 of a bag)
– 1 can of Black Beans
– 3/4 of a container of cottage cheese
– 2 cups of shredded Mexican cheese
Layer everything into a greased pan. The order doesn’t really matter. You will want the chips on the bottom, then layer either the beans, cottage cheese, or salsa on top. You’ll want the wet ingredients on top of the chips to help bind it into a crust. Add a tiny bit of water if you feel it’s too dry. Then cover the top with cheese.
Next bake it in a 350 degree oven for 30-45 minutes. Until the top starts to bubble and the cheese is all melted. Then serve. I drizzle ranch on top (completely optional). This dish goes great by itself or can be served with a side of Spanish rice and a salad. We ate this last week with corn on the cob. Yum! Toddler and husband approved!
