Easy Pasta Salad
As you might be able to tell, I like dishes that are easy. I don’t like spending a significant amount of my time making meals. I like things that can be thrown together if and when my toddler decides to take a nap. I also like dishes that are toddler, husband and myself approved. That’s the hard part, getting us all the eat the same thing.
What you’ll need:
* Whichever type of noodle you like (I used rotini noodles)
* Grape tomatoes, cut in half
* Cucumbers, cut into bite size pieces
* Green Peppers, cut into small pieces
* Black olives, cut in half
* Your favorite Italian Dressing (I used Olive Garden Italian Dressing, mmmm)
* As an afterthought, add some mozzarella cheese if you’d like.
I saw on Pinterest how to cook your pasta in less time. NEVER cooking it my old way again. The secret is to pre-soak your noodles before cooking them. I placed the noodles in ziplock bags for about an hour before boiling them. Once I got my pot to boil, I put the pre-soaked pasta into the boiling water and they were done in 4 minutes!!! The noodles were perfect, not soggy at all!
Then I placed them in a Tupperware and let them chill in the fridge until I was ready to eat it. I let mine chill for about 3 hours. Once I was ready to assemble the rest of the dish, I placed the noodles into a bowl. I poured a generous amount of the Olive Garden Italian Dressing (about 1/3 of the bottle). I cut up the grape tomatoes, cucumbers and olives, then combined them all together in the bowl.
After we started eating, I thought that adding some mozzarella cheese would finish it off nicely. I was correct. So the photo with cheese isn’t very pretty, but it tastes delicious!
