I typically enjoy making dishes that can be our whole meal. I want something that is filling, delicious and eaten by both my husband and daughter. This is one that they both enjoy. Thank goodness.
What you will need:
* Pasta of your choice (I used Rotini)
* Can of vegetable broth (or any kind if you eat meat)
* Mascarpone Cheese
* Cream Cheese
You’ll want to start by boiling some water and vegetable broth. I use half water, half broth to flavor the noodles as I cook them. I put the noodles in Ziploc bags filled with water, prior to boiling so it would be quicker to cook them. Seriously, the most amazing trick and time saver.
Then you will only need to boil your noodles for about 5 minutes. I also cook the peas separately. I use frozen because they are quick. Cook the peas until they are soft.
Then drain most of the liquid once your pasta is cooked. I leave a tiny bit of liquid, so that the cheese mixture isn’t super thick. While the pasta is back in the pot, I add half a container of Marscapone cheese and half a package of cream cheese. Mix it together, and the cheese should melt and become creamy. Once it’s been mixed well, then add the peas. Now it’s ready to serve. Enjoy!
