I got my husband to eat some spinach tonight! I am a genius!!! Some nights (most for me) I want to throw something together. With a toddler “helping” in the kitchen it can be quite difficult. On hot summer nights I want a meal that is satisfying, but not heavy. I think this perfectly fits that description.
When I’ve made this in the past, I usually use asparagus instead of peas, but my husband hates asparagus, as well as spinach and I wanted him to at least try it. He did pick out some of the larger pieces of spinach, but did eat some. My daughter ate all her broccoli and spinach. I’ll take it!
What you’ll need:
* Pasta (I used penne)
* Nice olive oil
* 3-4 Cloves of garlic, minced
* Peas (Or asparagus, or both)
* Parmesan Cheese
* Salt & Pepper to taste
While the pasta is cooking; steam your veggies. In a sauce pan you will saute the spinach and garlic in the olive oil.
Once the noodles are cooked to your liking and the veggies are the texture you like (I like mine slightly soft) mix everything together. Top off with Parmesan cheese and serve.
Since I’m a vegetarian the carbs or starches are the main part of my meals. This one is pretty guilt free. I served this dish with corn on the cob (it was beyond delicious), and fresh peaches for dessert. This just screamed summer in my mouth. Yum! Hope you enjoy, I know my tummy did!
